This is very true. The books feel more like a fantasy travelogue than anything whereas the movies are much more focused on the main plot. I would say the same for A Song of Ice and Fire and the first four seasons of Game of Thrones. The books and screen adaptations were just different experiences, and I wouldn't choose one as better than the other.

Hoid has access lot of Investiture arts, many from the time of Adonalsium. The glowing eyes could be a result of any one or several or all of them. Perhaps anyone with that much Investiture has tells, Hoid is good at hiding those but even he might slip up from time to time.

The Lord Ruler, the hope dampening aura, I-don't-care-I-just-got-skewered-attitude, casual backhand skull fracture. The horrors that this guy is responsible for: the skaa killed at parties, at the fountain, at the plantations, not caring about the House war or his own followers. Finding out what the Inquisitors were, then the Koloss, then finally the Kandra, which did not sink in for a while.

Animated Cosmere would be better. Have you seen anime action scenes? Live action CGI would be costly, so much content would be cut...

Though Brandon recommends reading it after era 2, you can read Secret History after finishing Elantris. I'd recommend not getting Secret History separately, instead simply go for the Arcanum Unbounded collection. Read that after Elantris, then move on to era 2. Era 2 can be a bit jarring as it's nothing like era 1, this should smooth the transition

Not necessarily. The WoB just said that not all Vessels were human. A condition that has technically already been fulfilled. They could also only include human and Sho Del among their numbers, and no Dragons. Brandon did specify that Yolen had three sapient species, so there could be (a) draconic Shardholder. I am in the Edgli is a dragon camp. But I don't think that it's a given that one (or some) of the Vessels are dragons

I think he's summoning the Shardblade but it hasn't fully materialized yet
