There's also the possibility that the spren don't know, or that their instincts compel those in the Physical to bond, after the transition from the Cognitive strips their memories. Perhaps they never had a true picture of the proceedings, and only saw the results of the "betrayal" when the KR abandoned their bonds.

Of course, the whole "act honourably thing and you get power" might actually reward those who make stupid yet honourable descions with the ability to blow things up in a multitude of ways better, but enough other weapons and also the good old "I don't need weapons cause I'm not stupid enough to end up where I'll need them" balance that out. Basically, any evil genius on Roshar should be very genre savvy. Edit: Of course, with fabrial science coming into play, the next desolation might have an extra edge to the humans...or it might be the excuse Odium needs to go all out this time.

I just had an image of a neigorhood with this one guy walking down the street... and the entire population of the planet is following him from around the block. There are mountain-sized mounds of people kicking and struggling to see this one guy. In complete silence.

No, they don't. That's kind of the point. They are diametrically opposed, but used together rather than against eachother, they can create, destroy, and preserve.
