I have trouble believing that a honorable, one-on-one duel between a Shardbearer and someone with more mundane weapons would go any way but badly for the mundane one. On the other hand, those fabrial-shields could ostensibly be modified into a blade capable of parrying a Shardblade, though heavier, shorter, etc... I could see Dalinar using one of those and a shield to get a standard sword and shield approach. If you could afford to burn the Stormlight, you might even be able to trap an enemy's blade for a moment

In shadesmere Shallan and Jasnah both have clear physical sensations in which they experience their bodies. I don't see why you couldn't then be tortured there. -

Or, possibly, the Stone Shamans have a greatly inflated view of their ability to retrieve said sword. There's a difference between the leaders of an isolated hirarchical community say that they'll get something back and actually being able to do it.
