But would you even be able to soulcast insulin? It's been a while since I read SA, so perhaps I'm misremembering, but can't something only be soulcast if it's one of - or a variant of - one of the Ten Essences?

Fabrial soulcasters yes, as a Radiant it is merely easier to do one of the essences, Jasnah is mentioned as creating medicine during RoW for one example.
