Zoruas can shape shift into human beings and Pokemon, but make no noise, when they evolve into Zoruarks, they can speak in human form. I'm mostly certain that they can't use the abilities of the Pokemon they mimic. So if you don't want to be infiltrated, only employ people who know tricks that only a human could know, like whistling or juggling or sword eating or advanced yoga positions. Zoruarks can't use other creatures' abilities, so they won't be able to pass the authenticity test! That or, you know, passwords. But my idea makes for a livelier office workplace. 1

I've never played the card game, and the only video game I played was the little known spin-off Pokemon Colosseum. Mostly I just watched the anime as a kid and geeked out over the handbook I had about the first 150 Pokemon. (Words cannot say how happy I was on the day when I got the deluxe edition that included Mew and Togepi.) It seems a bit silly now, but such is childhood.

The pokemon TCG community is pretty tame compared to others. You want people who are obsessed take a look at Magic the Gathering players. 1

So what you're saying is that Espeon and Umbreon didn't make good starters and that Orre should have used Cyndaquill, Chikorita, and Totodile instead? I might agree with you, but having Shadow Ball early on was a blessing and Espeon was a godsend when it came to fighting that Shadow Makuhita in Pyrite Town. 2

Really, I personally would say that if you have the choice you should take the gen 3 starters, as those are the best (not necessarily stat wise, just from how much I like them ) and if Wes was a proper pokemon trainer he could just have caught further pokemon as needed instead of relying on just taking from trainers that are not as good as him. You'll notice all the Pokemon you do see are imported from other regions, suggesting that Orre doesn't have a native population of its own.

High grass isn't the only place to find pokemon, there are plenty of deserts or caves in the other games with wild ones running around. All the other regions have Pokemon that are unique to them. Orre is the only one populated entirely by species imported in from Japan. Wes is pretty brave and is a good battler, or at least becomes one over the course of the game--personally, I find it more interesting to consider the implications the lack of wild Pokemon in Orre has for the world. If Japan is absolutely infested with these creatures, why aren't there any to be seen in North America?
