Arguably, in the time Sazed was remaking the world, he wouldn't have known about Hoid or the Ire, so by extension the words of founding shouldn't have either. It's possible he only knew of Vin and Kelsier holding Preservation because the power itself has a history of what its done

But we know that they have works by the other Originators (as well as apocryphal works). So did Kelsier spill the beans to Spook, who did then record it?

I think it's possible that Kelsier told Spook of the Ire (people from other lands existing between worlds and coming to Scadrial) but I doubt he would have said anything about Hoid for two reasons: Back then he only knew Hoid as "Drifter," and as far as he knew Drifter was still in Fadrex when it fell and died there or during the remaking of the world. If Hoid had become known through the Words of Founding, we should have seem some of that in the interactions between Hoid and Wax/Wayne.

The Words of the Funding already includes the fact that Kelsier holds Preservation. Because of that it's very likely it would include the explanation of how that was possible, and if the Orb was mentioned, by extension, Ire had to be as well. I doubt Hoid was mentioned in it, as Kelsier meeting him did almost nothing for the events unfolding. I even doubt that Khriss and Nazh were mentioned (Wax didn't recognize her in BoM, nor did the lady Leecher from newspaper stories). And It's very likely that even Ire was missed because of how Marasi, Wax and others react to the prospect of other worlds existing. TLM spoilers: Spoiler ch 11 Quote “That might be hard,” MeLaan said. “Since it’s kind of on another planet...” “Another planet?” Marasi said. “Well, maybe between planets?” MeLaan said. “I’m not entirely sure. Harmony wants some of us to strike out, begin exploring, learning about the cosmere. It’s become evident that the cosmere knows about us.” She nodded toward the spike pinched between Wax’s fingers. “What’s it like?” Marasi asked MeLaan, with a certain ... hunger in hereyes. “Traveling out there. How ... do you even do it?” ch 13 Quote He hesitated, then shook his head. “When Harmony showed me Trell’s influence enveloping our planet, even he seemed baffled. Our world, and ourgod, are basically three and a half centuries old. There are things out there that are far, far more ancient. Far, far more crafty.” ch 20 - note she said "she knew because Kandra talked about it", not Worlds of the Funding, and MeLaan talked about it in ch 11, quote above, so she literally learn about existence of other planets in TLM, not from Worlds of the Funding, which strongly suggest Ire was omitted there. Quote The woman smiled, turning her eyes back to the road. “Strange how similar cops are, regardless of the planet.” Regardless of the planet. Rust and Ruin ... Marasi had known that there were other planets out there, of course. The kandra talked about it. But ... rusts. It was still hard to accept. ch 39 Quote Marasi hesitated on the threshold. Ruin. Was she ready to meet the Survivor himself? A man she had been taught since childhood to worship, a man who had transcended even the grave. Who had briefly held the mantle of Preservation before releasing it to the Ascendant Warrior. And who had then protected the people of the Southern Continent for years after the world was remade.
