As a fan of both worlds I don't think Jedi are that good at deflecting physicle projectiles except with mass force pushes and a mistborn could just sneak up on them and fire 20 coins into their chest.

Jedi allow the force to guide their movements, both offensively and defensively. Once atium has burnt out the Jedi win. This also works for pewter strength. Metal projectiles can be force pushed or manipulated. Riot would turn them darkside and give the Jedi a power boost. Soothing would make them more in tune with the force to guide their movements.
