I have a few very important questions:
Should I join a new RP?
Should I add a new character to an RP I'm already in?
If I join a new RP, which one(s) should I join? I only want to join one, maybe two.
If I do either one of those things, what should my character be like?
Or should I just refrain from allowing myself to place more stress on myself?

I really like the Reckoners trilogy, but Skyward/Starsight are really good, too. I definitely feel like Rithmatist is a bit of a younger story, maybe not as young as Alcatraz, but definitely not as...mature? Is that the right word? as a lot of others. If you want to start outside of a series first, then definitely read Legion, that one's really good, and probably the most mature outside of the Cosmere.

That is so storming cool!!!! Have you read anything by Brandon Sanderson outside of the Cosmere? If so, what's your favorite non-Cosmere Sanderson book/series?

Your English is pretty good! It's definitely easily understandable, so I think you could absolutely join forum games, RPs, theories, etc. In fact, I know that for some other people who don't have English as their first language, participating in a lot of stuff on the Shard has helped them improve.
