My headcanon was that the Old Magic was a pre-Shattering Adonalsium-based magic.

Well it would definitely fit the name.

the old magic is the power of nightwatcher, wyndle (a cultivation spren) call her 'his mother', syl (a honor spren) call the stormfather 'his father'.

common teory is the nightwatcher is the god-spren of coltivation, like the stormfather is the god-spren of honor, so the old magic is the magic system of coltivation (surgebind is honor, and voidbind odium)

But it's entirely possible that Nightwatcher existed on Roshar prior to the Shards, just as Stormfather did. Just because Nightwatcher has become associated with Cultivation in someway doesn't mean she can't also be associated with some kind of ancient Adonalsium magic.

I was surprised to see such distinct soulcasting side effects. Am I right in assuming each kind of soulcasting has its own degenerate form? And if so, what happens to the people who convert stone into food? Do they become living bagels?

Vines.

Each of the veterean soulcasters appeared to be becoming more like the relevant Nahel Spren for the polestone required.

So I suspect they become Baby Nahel Spren when they hit peak transformation.

Well that's a interesting thought. It be kind of like the Fused but still different enough.

I'm not sure if it would work for all of the orders though.

Stormlight's healing factor could potentially assist in delaying/resisting this effect of savantism.

I think it has to.  Jasnah has Soulcast a lot, especially recently, and isn't showing any signs of becoming smoke or stone.

If that were the case those growing vines would become light, emeralds are associated with Truthwatchers.

Have we seen any savantism with any other  fabrials? Or just the Aimian-made ones?

I think these ancient soulcasters are different enough from modern fabrials that they aren't really the same thing at all.   Navani makes machines, designed by science and powered by spren.  Once manufactured, anyone can use them just by pressing a button.   A soulcaster, on the other hand, is weird magic, requiring a special connection to operate and exacting a terrifying cost.

Navani used to believe that soulcasters were a type of fabrial that would someday be reverse engineered, but recently changed her mind.
