It shouldn't be a problem. During our busiest weeks I sometimes have to ask people who have submitted recently to delay submitting until the next week, so be aware of that, but usually people are able to submit more than one week a row if they want to.

I just use MS word (or write by hand, in fact). I fairly recently started using Wikidpad for notes, though, and am quite happy with that.
