Potatoes were probably considered to by elegant by those in 18th century (I think) Ireland, as that was a huge part of their diet and one of the main factors governing their survival (eating is pretty important). Diamonds are inherently elegant, and eating them makes the potato a very rich potato if he can afford to waste them like that, and rich people tend to have very elegant mannerisms/clothing/houses/whatever. The arson is because nothing is more elegant than flames/destruction.
