I really like the Chandrian poem from The Kingkiller Chronicle. It gives me chills:

Some of these are more lines than actual quotes from characters, but still they are pretty cool:

From the Prophecies of the Dragon from the Wheel of Time:

One of my favourite quotes ever is from The Way of Kings:
