I'm on my 2nd re-read of WoR to see if I can find some small hidden fragments of information.

And there are quite a few of them on Shallan I must say, but what got me strangely happy was how Kaladin attracted captivityspren...! here's the line in WoR

He stood, waving away some strange spren like taut wires crossing before him,...

and from Axies

"Well," he said to himself, making a final notation as one of the guards grabbed him on the shoulder. : It appears I'll have another chance to search for captivityspren."

Are there any other spren mentioned in the book that Axies havent seen yet that we know off?

Presumably he hasn't seen any of the Stormspren that the Parshendi bind with...

But did you have to say capture? Because now I imagine Axies running around Roshar, trying to fill up his pokedex.

Has he actually seen the deathspren?  They seem to be treated as apocryphal in the world of Roshar.  Shallan doesn't even believe in them, comparing them to the Voidbringers initially.  Plus, I don't think Axies has met the criteria to attract them.  Seems like a spren you may not exactly want to attract, even for scholarship!

Hopefully Ax will run into Kaladin at somepoint and then he could record a second-hand account of encountering death spren. In return, he maybe can teach K how to alter his forehead glyphs to spell "I am awesome" or "Syl is intelligent and articulate".
