This one's pretty straightforward. 

Does the color that Nightblood saps from you return after given enough time?

No, colours leeched from Awakening in general does not return after time. The process is physical: the pigment, dye, probably also crystalline microstructures that reflect light a certain way, are all actually altered by the process

It is actually a physical change, but the spirit of the thing is changing, and it's filtering through to the Physical Realm.
