I have a feeling Wheel of Time will disappoint, and I don't have any faith in Game of Thrones prequels.

The Witcher and HDM look high quality, but I haven't read any Witcher books and I wasn't a fan of the HDM books.

Kingkiller and Dark One might not happen (not a fan of Kingkiller either).

Lord of the Rings could be interesting, so I voted that.

This is merely my curiosity speaking, but what brings you to this conclusion? Everything I've seen about the show thus far leads me to believe that we've got qualified people who are knowledgeable about the source material showrunning and writing; and from what little we saw of the table read, the actors involved seem to know what they're doing.

The 1st 2 books are actually pretty well-structured and a beautiful read. It would set the story well however I agree that him announcing it was going to be longer when there's already a 10 year wait is a little bit ridiculous.

The new trailer for Witcher is starting to make me doubt my decision to pick WoT. I haven't read any of the books yet (though I plan on reading at least the first one before the 1st season). But damnation, the new trailer is soooo much better than the one that came out during the summer. It's actually making me hyped.

Gotta be Dark One - I've been a huge fan of JMS since Captain Power (pre-Babylon 5). B-5 was IMHO the best show that had ever been on TV at that point: the very first "novel for television," with a multi-season story arc (X-Files learned from them!). Brandon and Straczynski collaborating would be the absolute best. I hope Dark One happens - if not, I hope they work on something else together. JMS has good connections in TV, and has always fought for his casts & crews to be treated & paid fairly.
