The purity. Some people mix in stuff like mass and it muddies the drink. They are NOT related.

Well, the quality of gravity depends on many different factors, including Grub’s answer. The main things I look for, however, are where and how it is sourced. I think the highest quality gravity is harvested from neutron stars, while some people choose the cheaper option and make it out of the base stones of a mountain. Not like I have anything against the mountain option, it just makes it more likely to be less pure than other options. 
And, of course, most distillers use the government-approved Metaphysical Converter 9010. However, the Converter is quite expensive, so some distillers use home-made or illegal machines to create the liquified gravity, which affects the quality quite a bit.
