There are likely to be many interpretations of this question. Minor WaT Spoilers:

Arguably, it starts at Day 2. At least, in that one of the defining characteristics of the Sanderlanche is that the viewpoints start changing quickly (with more viewpoints per chapter, than the chapter header would imply) - and that happens throughout nearly the whole book.

Those that like it, love it. Others found that it detracted from the story for them. 

If, however, you mean "when do plot issues begin to be resolved" then that would be mostly Days 9 and 10 (but, like all previous Stormlight books, there are smaller climaxes earlier in the book as well).

I'd say day 9 or 10. But honestly it felt like there were more sanderlanches sprinkled about. Like what Trea said, there were multiple times where certain weeks when the preview chapters came out that made it feel like a sanderlanche when we were reading them serially.
