To "Nuke" your self with stormlight wouldn't you need to burn all of the stormlight on Roshar like how Vin burnt all of the mists. Could that mean you would become Honor by taking all the stormlight.

 

Probably not. Szeth and Kaladin both describe themselves as feeling close to bursting when they take in a lot of Stormlight. If they took in too much, I imagine they'd kill themselves without becoming Shards.

I reccomend checking out the Topic,   Physiology of Stormlight,  It goes through all the Medical implications of Holding Stormlight, and it's bassicly impossible to become a Shard by holding to much stormlight. Your boddy would litterally burst before you could.

Now would they just die or become a Splinter? I'm kinda leaning towards just dying.

It would depend on how the Stormlight killed them. If the Stormlight rips apart your lungs and blood vessels then you would just die a gruesome death. If the Stormlight does what happened to Vin, you would become a Splinter/Shard. The level to become a Splinter/Shard is likely higher than the lungs exploding point.

Maybe Stormlight could heal the lungs as they rip apart to give you enough time to hit the second "POOF" point.
