So in (an earlier version of) TWoK, Moash was described as having "green" eyes despite being a darkeyes - at one point explained away as just being "dark green" eyes and not "light" in the way that lighteyes are meant to have light eyes on Roshar, but then the Coppermind entry for Moash includes:

Moash's eye color is initially (and erroneously) written as dark green in The Way of Kings. In Words of Radiance, his eyes are said to be brown. Peter Ahlstrom has confirmed that Moash's eyes are brown and that the first book is incorrect.

But in the Rhythm of War previews, in Chapter 8: Surrender In The Basement (the Fall of Roshone), he's described again as having green eyes.

Might this be from bonding/wielding the Honorblade? But it's Jezrien's, the Windrunner Blade - shouldn't that make his eyes turn blue instead, at least while Surgebinding, the way the Windrunners do?

The Honorblade only seemed to change Szeths eyes when he summoned it kinda like Kaladin.  

And like you implied, lighteyes/darkeyes refers to how bright or dark the shade of the eyes are, not their color. Someone can have dark green eyes and they'd be considered a darkeyes. You said in "an earlier version of TWoK," did they correct it? If they did indeed correct if for later printings and it happened again in RoW then I would say it's probably Brandon originally having it as green, decided to change it at some point, and then forgot that he made the change. This has similarly happened with him accidentally using silver instead of tin in some of the Mistborn books because tin was originally silver and it's still in his head that way somewhere.

Yes, to a light tan. He was "back to being a darkeyes" after unbonding that Blade - the one that Kaladin gifted to him - when surrendering to the Fused that killed Graves and the other Diagram members in the attack where he managed to kill Leshwi with no Surges or Shards.

If I remember correctly this was noticed and mentioned to Brandon in the Stormlight subreddit. I feel like I remember him saying it would be changed. The preview chapters we are reading aren’t the final version I believe.
