When Odium chooses his champion, he is somehow bound by the result of the contest. Laws could be viewed as oaths. You are bound by them. Edit: Odium CAN NOT break oaths. WoB indicates that all of the unmade together are equal to Stormfather or Nightwatcher. Also none of the unmade seem to be anywhere near as omnipresent as those two.

That's the whole deal with the Old Magic, right? You have to travel to the Valley to seek out the Nightwatcher. Is this the WoB you're referring to? To me, "the parallel is the various Unmade instead of a single entity" does not mean that they're the same total power level, it means that all of the Unmade are Splinters of Odium, just like the Stormfather/Nightwatcher are Splinters of Honor/Cultivation. It even explicitly says in the next bullet point that the parallel is that they're Splinters. Quote Brandon Sanderson (paraphrased) 1) The Nightwatcher and Stormfather are parallel entities such that Nighwatcher:Cultivation :: Stormfather:Honor. 2) There is sort of a parallel for Odium, but the parallel is the various Unmade instead of a single entity. 3) They are parallel in that they are all Splinters. 4) The Unmade are voluntary Splinters, because Odium ("like almost all of the other Shards") voluntarily Splintered part of it's power. 5) The Stormfather is different from the others because it's a Sliver. Lets point out that even if I am wrong and Nightwatcher is about the same as or weaker then an unmade she is still almost certainly more powerful then any spren Sja-anat has ever touched as Sja-anat had trouble doing her thing on the two oathgate spren and she said that those two are the most powerful she has ever done(I find it doubtful that they are as powerful as the Nightwatcher as there are 20 of them spread around Roshar and none of them are the three great spren talked about in WoR).
