One section mentioned how several arcanists had luck with overfeeding the entities, but the chapter that line was linked to didn't mention anything about that. Does anyone know which chapter that line this information is mentioned or have any theories as to what happens when an entity is overfed?

She didn’t know him well, but he didn’t seem the type to lounge, even when alone. “I have sent a request to the man who oversees this machine. The Intensifier should arrive within a day or so.” She spun toward him. “What?” He laughed. A forced sound. “No, I didn’t know you were coming. I sent for it to try and deal with that entity outside. Some arcanists have had luck overfeeding the things. I might be able to put it to sleep and get a team past to the center. Therefore, you have an opportunity. While the machine is here, I might be willing to try other applications.” Unreliable Narrator applies, just because Dajer says he has heard this rumor, does not mean it is true and does not mean with would work on The Evil. They annihilate any Investiture they come into contact with. "Overfeeding" likely means they can't be outright destroyed (without shardic intervention, anyway) by feeding them Investiture, but I imagine overfeeding an Entity basically just means weakening it by making it annihilate enough Investiture to become Lethargic. 1

I mean, with enough inestiture… Investiture destroys anti investiture, not just vice versa. But yeah it would have to be a heck of a lot of investiture.

While never explicitly stated, we know that (SA): Spoiler Vasher knew about the anti-light and almost certainly would have drawn a comparison between it and the process used to create Nightblood, if Nightblood were an anti-investiture based entity. Investiture, especially a large enough quantity, is affected both by the thoughts of those around it and can become self-aware, after a fashion. As far as we're aware, that's what the Evil is - sort of self aware anti-investiture born from the splintering of Ambition over Threnody. The people on First of the Sun see the Dakwara as a giant animal protector god, which would shape this investiture seeking a form to match it more - in the same way they changed it to protect them and "obey the one who defeated it".

That's a good thought. I'm working on the assumption that anti-investiture is created by inverting the Intent of the Shard, and now that I think about 'Destroy Evil' is pretty close to the opposite of Endowment's Intent.
