So in this book, we got both Kal and Szeth (and maybe Shallan??) swearing their fifth ideals. And then Szeth broke his bond and Kal left for the Hyperbolic time chamber. So we still don't know what the Fifth Ideal does. Yet I think I found a clue.

Chapter 135

"That was," Ishu said, each word clipped, "among the most idiotic things I have ever seen a mortal do. Abandoning your oaths just after the Fifth Ideal? You could have been Immortal."

So I'm thinking that the fifth ideal slows the aging process somewhat like whatever happened with the Heralds post-Ashyn and pre-Oathpact.

I took the immortality remark to be about becoming a herald.

But 5th Ideal I think just lets you use Stormlight better. Shown by Nale being able to overtake Kaladin on Stormlight absorbing

It seems like some combination of being able to more efficiently use Stormlight, and also the bond with your spren being improved massively. Syl mentions earlier in the book that her bond with Kaladin is what lets her do more and more corporeal things, and at the end of the book it's implied she's crying real, actual tears. Perhaps the fifth ideal allows the spren to fully corporeate at will?

We know that the surge binders on ashen  were maybe not immortal but definitely long-lived so my guess is that it’s the same thing.  becoming a fifth idea won’t make you immortal. I will give you a couple hundred year lifespan.  which will be a convenient way for Brandon Sanderson, to still have some of the characters from Stormlight exist in era 4
