Cole blocks it with the relatively strong bow saw. “How am I supposed to do that?! The guy’s in full plate!”

But why? Plate makes that pretty harmless, so Cole would be spending life energy for nothing, as opposed to spending life energy to make the knights spend life energy re-lighting the fire.

Do you know how heavy plate is. He'd be down for a good amount of time.

I haven’t heard about that. 
I wore a set of plate armor for a museum demonstrations, and I don’t remember it being that heavy, but that was a while ago. (I know the actual weight is pretty significant, but the distribution makes it easier, I think. Knights could supposedly do cartwheels if full plate.) 

Cole tries to shove the knight off the horse, leaping into the air for a flying kick so he can get more momentum.

I think its because chainmail was also worn under the actual plate. So it adds a good amount of extra weight

The knight, pushed by the wind, falls over. He gives out a cry of pain as he hits the ground, the links of the chains digging into his skin.
