However, am I correct in assuming that it would also dramatically limit the level of investiture mastery she will be able to achieve. It seems that the level of investiture she is granted by eating is dramatically less than that of other Radiants. 

    Why do you think that it is less?  We have seen her grow trees and heal large groups of people and slide around for hours.

      Only food she has not yet fully metabolized is converted(she can't use food she had turned into fat deposits or whatever) the food vanishes after a time.  She is also a growing teenager who just hit puberty and she spends a lot of time without money or other ways to acquire food easily.
