It's been ages since the Last Desolation, and knowledge about the Voidbringers is almost completely lost since the Recreance and the Hierocracy. It's a major plot point that no one quite knew what the Voidbringers were. They didn't remember what the Parshmen were or what happened to them. They did not know what Odium's forces comprised of, they did not even remember Odium's name. One of the depictions in-book of Voidbringers is a Chasmfiend.

In the real world, people imagined the inhuman fey, they also imagined little fairies. Trickster spirits or demons that grant you power in exchange for your soul are also common Earth myths. It's likely just how their myths and fables evolved, except instead of fairies or demons, they had the catch-all Voidbringers.
