What kinds of tech will be possible if different worlds find a way to use the different magics to power things, similar to what's going on with Scadrial?

That has already happened. If you have a heating fabrial, you can run a steam turbine, likewise an Awakener could tell a generatior to turn. AonDor gives you so many possibilities it is not even funny to list them. I suppose none of them will develop a fossile fuel technology or nuclear technology to the point we do. Medical science will suffer a lot.

They won't need science they have magical healing.

Exactly. And that destroys a lot of the incentive to build better microscopes, to develop biochemistry, to understand immunology or to build an MRI scanner. Even a good X-ray machine.
Likewise, why would you develop good batteries on Scadrial or Roshar?

At the same time why would you need to?  Batteries might make sence as stealth tech on Scadrial and Roshar because seekers can't find them but for day to day use investiture makes more sense.

Using Stormlight is all well and good, but what if something happens to the highstorms/the Stormfather and Investiture stops being so freely available?

Then then entire planet of Roshar is in trouble because most of the ecology depends on the stormlight.

Technologies are useful in other areas than those they were primarily developed for. Hence, for example, the techniques developed for the chemistry needed in medicine have been used in creating paints and plastics and analytical techniques in areas as diverse as archeology.

Not having plastic might actually be a good thing.  Their are some advantages to be found in it at least.

Soulcasting alone is a huge technological marvel if they can make it a fabrial that does not turn the person using it into that essence. You could produce all the plastic you want, and when it is thrown away, soulcast it to air or something organic for it to break down. On ships sailing through the stars soulcasters are basically star trek replicators.
