I haven't finished Oathbringer yet, but read a couple of descriptions of his appearance as being like light that's shone through crystal.

I'm guessing if he looked like a rainbow, the description would talk about colour (not sure whether rainbows would happen in this world, maybe during the weeping *shrug*), so probably not a cast rainbow.
