I am not much for cooking, but I make really good salsa and thats my thing. I don't want to share a great recipe like that if there is no interest in this project so if I can get at least three other people that are willing to participate I will share the goods (you don't even have to post first just say you are willing to post them when you have a moment). Pinnacle-Ferring he/him Posted August 2, 2017 Report Share Posted August 2, 2017 Cashew chicken Ingredients: 3 grated carrots 2-3 stalks of chopped celery 1 package of chopped mushrooms 3-4 chicken breasts chopped into cubes Wine Potato/corn starch Szechuan sauce Marinade the chicken in the starch and wine Brown the chicken in oil (it doesn't have to be completely brown) Add the chopped vegetables After the vegetables cook down a little, add the szechuan sauce and stir Cook covered for about 20-30 minutes Add whole, fresh cashew nuts before serving Enjoy! 1 Link to comment Share on other sites More sharing options...
Calderis he/him Posted August 2, 2017 Report Share Posted August 2, 2017 Kosher salt (to taste) 12 oz. penne, mezze rigatoni, or similar short pasta 1/4 cup finely chopped fresh flat-leaf parsley 1 tsp. finely grated lemon zest 1 cup quartered artichoke hearts 6-8 cloves garlic, grated 1/3 cup coarsely chopped sun-dried tomatoes 1/4 cup extra-virgin olive oil; more for drizzling 1/2 oz. Grana Padano or Parmigiano-Reggiano, finely grated (about 1/4 cup); more for serving Cook pasta, mix everything up. Here is my salsa recipe: Ingredients 1 lb of Roma tomatoes 2 Serrano Peppers (or use jalapeños if you cant find or want less spice. I leave half of the seeds in, but you take all the seeds out if you want less spice) 1 cup of cilantro leaves 3 cloves of garlic (I buy the pre minced kind. If you go this route 1 clove=1 tsp using as little juice as possible) 1/2 of a regular sized onion (white or yellow) Juice from 1/2 lime 2 Tbs of chile powder 2 tsp of salt (ajust based on taste) 1 tsp of sugar Directions use a food processor to blend all ingredients (except salt and sugar) until smooth. Stir in salt and sugar (I did this originally bc I wanted to ajust these last two ingredients, but I guess its just tradition that I keep doing it.
