Sazed mentions what Atium Feruchemy does, but he never states that he's used it right?

It might just be something that is known to modern Keepers and was used for Brandon to lay down more foreshadowing.

But how could they have known?

The Metals usable in the Metallic Arts are shared among the Arts, this is something the Keepers realized quite soon (and indeed TLR hidding some metals stopped the Feruchemist too from use them). So once a Mistborn could burn Atium, the Keepers will be really interested in what the "powerful" Metal could do in their magic. Probably one of them manage to test it...The Atium is rare and expansive but I think a single bead is obtainable by an organization like their own.

Feruchemy during the Final Empire period is an all-or-nothing thing so if you have the ability you can use all the metals, it's not like Allomancy during the same time period where if you have it you get one metal or all metals. It's only with the mixing of Allomancer and Feruchemist sDNA post-Catacendre that the single-metal Ferrings emerged. The gist of it is that the sDNA for Allomancy and the sDNA for Feruchemy interfere with one another.
