We know that 3 shards have their own "light" honor-stormlight, Cultivation-lifelight, and odium with void light. Can the other shards make or produce their own light? Do we have any confirmation on anything like this for other shards?

Light is the gaseous and liquid phases for the Rosharon Shards. Other Shards already have something that fills these roles (Breath, the mists, etc). Mist might be capturable in a gemstone (don't know if it can), but probably won't give off light like Stormlight.

Also adding that most forms of investiture give off some light. The Dor on Sel is white plasma (so kind of like a gaseous Light?), and the Hion lines on Komashi are neon cyan and magenta.
Technically the sand on Taldain glows when being mastered, but that's from the organisms in the sand and not Autonomy's interaction.

According to Coppermind, when a Shard invests a world, it's mainly the planet that decides how the magic will form. Shardic intent also plays a part.

When a Shard Invests a world, it will begin to fuel the local Invested Arts. Each Shard can do this differently, though much of the system is dictated by the planet itself. Because of this connection to the magic, a Shard is able to directly interact with its users and provide Investiture when necessary, without the need for intermediaries.[2]

While not all Invested Arts in the cosmere are directly tied to a Shard, Shardic presence greatly influences the shape a magic system takes. Shards are capable of putting rules and limitations upon an Invested Art, often times to prevent an Invested Art being used to its theoretical maximum capacity.

Supposedly, there was also a version of stormlight on Roshar from before the Shattering and before Honor arrived.

So before Honor arrived there was a proto-version of the storms and a version of Stormlight. Yes.

So I'm guessing that the Shards can't really change how their investiture manifests? I think they can only change the rules and mechanics. Honor probably can't change stormlight to be a liquid, since stormlight already existed. Likewise Devotion/Dominion can't make a "forgery-light" or whatever. Probably.
We'll have to wait until we can see the other shards to know if there's any other gaseous glowing invested art.
