I want to get the Knights Radiant symbol tattooed on my chest and want to include a quote but not sure how to place it or what quote to use. I put it here because of the idea of the quotes could be spoiler-y. I was thinking of "always the next step" but not sure where it would be placed properly (or stylistically) or if that's the best option for the knights radiant symbol overall.

You could do the First Ideal written in Women's Script

Coincidentally I have the first ideal tattooed on my chest. I've always been meaning to add more to it but couldn't decide what. Crossed Shardblades was my original intention but I don't quite think they would fit too well.

"Journey Before Destination" are words I like to live by. There are many good quotes to choose from, try to pick one that truly connects with you. The words will be close to your heart, quite literally, so be sure they reflect what's in it.

Do you think it'd look better if the words were on a stylistic ribbon/banner or just by it?

I've always struggled with how the women's script ends up looking, tbh.

That's fine if it's not your thing.
I just thought the way it looks similar to a Sinus rhythm and it's by your heart. . . Good symbolism, good message

I have the First Ideal in Women's Script on my forearm. I love the tattoo personally, but I wouldn't recommend it. The sharp lines will age really poorly, and I got it with the knowledge I'd like need to get it altered/covered.  I'm sure you can get it to a point it might look better over time but that would require talking to you artist and /or altering the look of women's script. Maybe try glyphs?
