Spoiler The Watcher Knights were the Hollow Knights pets. After the Hollow Knight was sealed away, they were driven insane not only by the infection, but first by hunger, once the desire was strong enough, they started eating everything edible that got in their way, which is how they grew to their final size. Once the infection hit, hey stopped eating forever and finally focused on the task of guarding the watcher's spire.
