Not like The Sims games but Im a big fan of factory simulation games.  Factorio, Satisfactory, and Dyson Sphere Program are the very best. 

I enjoyed Graveyard keeper which I think is technically a Farming Sim game, though it has less actual farming focus than the game it's riffing on (Stardew Valley).
