There are theories that 'lesser' spren like windspren/lifespren/gloryspren ect for each order become the plate, we also see Jasnah have some kind of pattern around her in the final battle in Oathbringer, that could be proto plate. As for Nightblood vs plate, if anything can take a hit from Nightblood its shardplate, but its impossible to know till it happens. 2
