might be spoiler-y read on at your own discretion. So, I was thinking when a shardblade is summoned water beads as if condensed from mist is said to contain on the sword.  

 

So, this is my theory or hypothesis.

 

Since a shardblade is an almost-dead-spren and when summoned there is steam and condensation, the spren was in cryogenic state in the cognitive realm. When summoned and brought back to the physical realm the condensation is liquid nitrogen still clinging to the blade or the spren is frozen that freezes the air around and actually creates condense water too from the air on the surface, until it reaches equilibrium with the ambient temperature.

 

Side note: Spren are very technological advanced if/since they have cryogenic technology.

Then why would they allow the dead spren to be torn into the physical real screaming?

No, probably not the case, mainly since we have Nightblood as reference.

The mist is likely the investiture required to form/summon the blade, not some sort of life support.

We see that Nightblood (a broken shardblade) leaks investiture, similar to how shardblade leak investiture when summoned.

This is probably due to some sort of interaction between Realms - when a Surgebinder uses high amounts of Stormlight, frost forms on their skin; in extreme cases clothing freezes.

This is likely a consequence of thermodynamics. The energy being supplied to return the spren is provided by the wielder in the former of heat.
