Suggestions for minecraft builds

So I'm starting this survival minecraft world who's sole purpose is building, where i've made a to-do list of builds that I want to add.

Any suggestions?

Keep in mind it's survival, so nothing insane.

Build a to-scale Minecraft Urithiru. (Just kidding. That, I think, would be a project of unusual size even for someone on the Hermitcraft server, and may not even be possible with the current build height limit.)

More seriously, I think it'd be super cool if you could build a flight of dragons.

I checked, urithiru is too tall even starting all the way down at bedrock.

Leave it to Brandon to invent something that can't even be replicated in Minecraft! 

You may have gotten yourself into some seriously huge building assignments.
