Where does the gravity come from?

That's it. Where in the nowhere is the gravity coming from? Does anybody know?

Great questions! It was very wand-wavey in the book. 

Breathable air and gravity: How about this retcon theory? It required a particular combination of gravity / fluid temp and pressure and chemical makeup to breach into the Nowhere dimension. (Kind of a convenient theory, but the only thing that makes sense to me.)

And: The Superiority only seeks out "lesser" species that have Cytonics -- and you can't have Cytonics unless you have a Nowhere gateway.
