Hoid is now a Lightweaver. He now needs to implement, maybe even research, a method to leave Roshar. In any case he seems quite interested in the conflict with Odium. So he probably does not even want to leave. Nor would that be easy. Hoid has been observed to use a perpendicularity. He would need to travel to the Horneater Peaks. So we can reasonably conclude that he is staying on Roshar. Where?

Does he have a Fortress of Hoiditude? If so, where? Or does he dress up as a beggar? There will be a lot of refugees. It is possible. Living in the wilderness on Roshar on the other hand is problematic. Hoid likely would survive a Highstorm out in the open, but it would be anything but comfortable.
Yet he bomded a Cryptic for a reason. Hence he would now be training Lightweaving, Soulcasting, fencing with a Shardblade or any combination of that. Doing that near any Fused or screamer spren is not a good idea. Especially as he likely does things like

testing what burning duraluminium combined with Surgebinding

will do. And we have to ask ourselves, whence did he get a number of aluminium sheets sufficient to shield a whole room before becoming a soulcaster. I would say he has some kind of depot or base near Kholinar.

Where and how does Hoid spend his gap years in general??? I mean in between his shenanigans on different Shardworlds when he's experiencing time dilation:

Hoid, so far, has only moved forward in time. He has not 'lived' all of those years, but has used some time dilation techniques. That said, he is far older (both in relative and real time) than a normal person can live.

probably involved in the inter-world trade, he was apparently hunting for the Lerasium beads, looking for a way to become a Feruchemist, playing the guise of a beggar/informant to influence the main character

He was playing a chariot driver to Sarene, looking to enter Elantris?, trying to become an Elantrian, contacting and establishing a partnership of sorts with the Skaze, infiltrating the Rose Empire court as the Imperial Fool, ingratiating himself with Shai to make sure she's imprisoned and does what she does, stealing the Moon Scepter for his own ends

On Roshar, he was there when Taln appears, when Jasnah appears (and gave her vital info), at pivotal moments with Shallan and Kaladin, at the Alethi court on the Shattered Plains as the Wit, in Kholinar looking for a certain spren, knew the Heralds from way before, hiding from the 17th Shard, probably aware of the Ghostbloods, etc

He has multiple plots running at any given time and uses his Fortune to know where he needs to be.

Currently, I think he's using a significant portion of his time practicing his Surgebinding or looking into how to travel with his spren. And he's probably doing his small influencing via talking and storytelling which will have significance later on all the while

As for the Kholinar secret underground aluminium lined bunker, wasn't it already there and Hoid simply told them where it was and why they should use it?

If I remember correctly Azure mentions someone that matches Hoid's description (who Kaladin recognizes as Wit) showing up with the aluminum sheets and helping/instructing them to use it to shield the room, when Kaladin gets her to spill the beans on what's happening.

Hoid does appear in Era 2 Mistborn which takes place between books 5 and 6 of Stormlight. Between now and then he must have found a way to get off Roshar. If he still has his Spren or just left it in Roshar we don't know. But it is a safe bet that he still has his Spren at that point.

On the world with a perpendicularity, no customs hassles and the best noodles and beaches I presume.
Also a world that uses coins, has dirt and no cremlings. Most tentatively, Yolen. And I suspect he owns a couple of bases in the CR, perhaps with lifeless staff. Maybe a beach house on Sel?

But how does he actually operate? Camouflage as a beggar has its limits. In Elhokar's court he was a jester. Does he have safe houses in places? Caves lined with aluminium?

If he is interested in Venli then their is an aluminum lined room in Kholinar that the fused have probably not found.  He could go in their and practice surgebinding or just wait for the right moment to talk to her(whatever that is).  He could also stick around in beggar disguise or even master lightweaving and put on a full parsh disguise to get close to her.  If he wants to be gone then we know he has lightweaving so he could probably get out of the city pretty quickly an a supply caravan of some sort and once out of the city he can go where he wants.  SA4 spoilers

We know he tells someone a story in book 4 so he has to be on Roshar and odds are it is a radiant or potential radiant

This indicates he will probably either stay in Kholinar or head to one of the oathgates.

He's supposed to be good at suppressing his Investiture. No idea how that works though, since we've only seen this with BioChromatic Breath, which makes sense since users of Breath are actually holding their Investiture even while not actively using them (unlike Allomancers who hold Investiture while burning metals or Surgebinders after inhaling Stormlight) and Breath is supposed to be more in the Physical. No idea how he's doing that with all of his other Investiture arts but he's Hoid.

Hoid can burn copper.

Would he need to test that? Possibly not. Hoid knows the theoretical side of the Arcane Arts well. He may be confident enough to just trust his predictions on the effect to just assume that it will work.
