Here's my theories: McGonagal is a direct descendant from Godric Gryffindor; or she is Gryffindor, reborn into a new body. It is possible to bring back the dead; it's just kinda hard. Meaning it's way more enjoyable if you try not to focus too much on the coherence (or lack of coherence). It comes with its perks, all kind of wild theories are perfectly valid and presumably correct until Rowling disproves them, and it allows for a lot of freedom if you want to make a role campaign.
