Eyes are often described as the doors or the windows to the soul and if I remember correctly, shardblades sever the connection from the physical to the cognitive realm (where the "soul" is located). When killed by a shardblade, it severs your connection to your soul and thus the eyes burn out because that window to your soul doesn't lead to your soul anymore. The soul is probably more of a Spirit Realm than cognitive realm thing if it isn't a little more complicated than even that. I believe it actually does a physical and cognitive kill, if I am correct. It needs to be a tad more invested for a spiritual kill The sword nimi is much more invested and kills in all three realms.
