My point is Jasnah does this kinds of stuff always. She didn't believe there was something wrong in the bread..but She did It regardless.

Also as far as we know, She will be uncapable of Soulcasting Bread into other Bread without visible effects.

Honestly I find your scenario with Jasnah Who made intentonally Shallan get poisoned a bit unrealistic as she could obtain the exactly same effect (without risk for Shallan) asking to Kasbal to eat First.

Jasnah is not a gamber, She is quite the opposite of a gamber. Your whole scenario has too many variables to be' likely for someone like Jasnah

Kabsal does so, grabbing the jam and eating the bread. Shallan is offended. The potential assassin now has the upper hand.

 

Jasnah does not view this as a gamble. The poison has never worked this quickly before. She has no reason to think he would change his habits now. Shallan is in a hospital with a soulcaster. It's the least possible risk with the highest possible reward. If she's wrong, there's literally no physical harm to anyone.

The jam was the likeliest poisoned food. Now, she doesn't eat sweets, but she could have thought Kabsal brought such a rare kind - strawberry - trying to tempt her scientific curiosity. She knows Shallan like jam a lot, so she snatched the jar from Kabsal and soulcasted it to save Shallan from what she considered potential danger. 

Now, why the bread? First, it's unreasonable to assume Jasnah would eat plain bread. She's a princess, used to fine meals. She doesn't have a liking in freshly baked bread, so there would be no reason to think simple bread can temp her to have a bite, thus it was unlikely the bread was poisoned. That's why Jasnah didn't worry about it, but when Shallan pressed her, Jasnah's natural suspiciousness and paranoia, something she shares with her brother, took over and she soulcasted it for her own peace of mind. I do not think she considered the bread as potential danger before she had to take a bite.

Likeliest by what basis? Jasnah doesn't dislike sweets, she hates jam. Kabsal has consistently offered her bread on every visit, described as "always" by Shallan "without jam, because Jasnah hates it." Kabsal is obviously infatuated with Shallan, Jasnah has observed this. She wouldn't expect Kabsal to try to kill Shallan, only her.

Kabsal consistently offers throughout the book according to Shallan. This is suspicious itself if Jasnah is suspicious of Kabsal. If you view the action as unreasonable, that's all the more reason for Jasnah to pick up on the unreasonable "peace offering" to an Alethi princess from property. She also tests other jars for antidote after the fact showing she's considered the possibility and solved the case. She latches onto Shallan's Poisoning with extreme alacrity. All the evidence fits.

When though? Jasnah confronts Shallan a half hour after she wakes up. She couldn't have been asleep for more than a day. Jasnah had to have a good idea of what was going on to request that old jars of jam be found and tested for backbreaker powder antidote in that timeframe.
